So what’s the big deal about olive oil? Olive oil is extremely high in monounsaturated fat. Monounsaturated fats, or MUFAs, can help lower your cholesterol and control insulin levels in the body. Olive oil is also chock full of polyphenols, a powerful antioxidant that protects cells from damage by free radicals. Oleocanthol, another antioxidant found in extra virgin olive oil, has been demonstrated to have anti-inflammatory and anti oxidative properties. The value of cold pressing Any olive oil that has been cold pressed means that the temperature during processing never exceeded 27 °C (80 °F). When heated, many of the volatile (and healthful) antioxidants and polyphenols present in olive oil begin to break down, and the the oil loses much of its potency. What’s the difference between virgin and extra-virgin olive oil? Olive oils are produced by olives by mashing the olives into a paste, then pressing this paste to squeeze out the oil. Any olive oil marketed in the U.S. as virgin or extra virgin was produced with mechanical means only and absolutely no chemical agents were used – any olive oil marketed as refined has undergone processing with heat and/or chemicals to eliminate off flavors and/or high acid content. Extra virgin olive oils are those that come from the first pressing of olives and is judged to be of higher quality and have a lower free fatty acid content. Per USDA standards, any olive oil that is marketed as extra virgin must be have “excellent flavor and odor and free fatty acid content of not more than 0.8 g per 100 g (0.8%).” Conversely, virgin olive oils must only have “reasonably good flavor and odor and free fatty acid content of not more than 2 g per 100 g (2%).” In short, extra virgin olive oil is simply better, and better for you, than virgin olive oil. 16.9 fl oz (500mL) in glass bottles.
